Apsara Cellars was founded by Robin and Aneeta Akhurst through a shared belief that great wine begins with respect for the land. The couple first met more than two decades ago while studying biology and environmental science in Indonesia, long before launching Apsara with a philosophy centered around organic, biodynamic, and sustainable farming practices. The name “Apsara,” derived from Sanskrit, refers to an angelic dancer symbolizing balance, purity, and expression, principles that continue to shape every wine they produce. Robin Akhurst’s path into winemaking was anything but conventional. After graduating from the University of Edinburgh, he rode his motorbike to Southern France, where he pursued formal studies in Enology and immersed himself in some of the world’s most respected cellars. His experience working alongside legendary figures including Anne-Claude Leflaive in Burgundy, Matt Wenk in Australia’s Barossa Valley, and Thomas Rivers Brown in Napa Valley helped shape a winemaking style built on restraint, site expression, and balance rather than sheer weight or excess. The 2023 Apsara Syrah carries that philosophy beautifully. Crafted in a style that leans more Northern Rhône than heavily extracted California Syrah, the wine emphasizes freshness, aromatic lift, and structure alongside dark fruit depth. Cool-climate influence and careful oak integration allow the varietal character to remain front and center, with layers of blackberry, plum, cracked pepper, violet, smoked herbs, and subtle savory earth unfolding gradually in the glass. There’s richness here, but also precision and energy, giving the wine a refined, Old World sensibility that makes it both compelling now and built for evolution over time.
